Every truffle travels the cold chain wrapped in breathable paper, from the moment it's harvested until it reaches you. Once delivered, keep it refrigerated in a sealed container and use within 3-4 days.
Trained truffle dogs can catch the scent of a ripe truffle underground from meters away. The digging is done by hand, carefully, exactly where the dog points — the soil and root structure are never disturbed.
Training begins in puppyhood with an introduction to the truffle's scent. Months of patient work teach the dog to associate the smell with reward, and to point rather than dig.
